We have an Einkorn Sour Dough bread that those who are gluten intolerant seem able to eat with no issues. The sour dough sets for at least 12 hrs giving the enzymes time to work. At this point the enzymes seem to have eliminated any gluten in the bread allowing it to be eaten by those with gluten intolrances.
